  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 ripe bananas, mashed
  • 2 tsp pure vanilla extract
  • 3 large eggs

Instructions

  1. Preheat the oven to 325°F (160°C) and lightly grease a springform pan.
  2. In a bowl, mix graham cracker crumbs with melted butter and ¼ cup sugar. Press the mixture into the bottom of the pan and bake for 10 minutes until golden.
  3. In a large bowl, beat cream cheese until smooth. Gradually add sour cream, remaining sugar, vanilla extract, and eggs one at a time; mix until well combined.
  4. Gently fold in mashed bananas.
  5. Pour the filling over the cooled crust and bake for about 60 minutes or until set but slightly jiggly in the center.
  6. Turn off the oven and leave the cheesecake inside with the door ajar for an hour to cool gradually.
  7. Refrigerate for at least four hours or overnight before slicing.
