  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • 1 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • Cooking oil (for frying)

Instructions

  1. Preheat your oven to 400°F (200°C) for baking or heat oil in a deep skillet over medium-high heat for frying.
  2. In a large skillet, sauté diced onions and bell peppers until softened. Add minced garlic and cook for an additional minute.
  3. Stir in the ground beef, cumin, chili powder, salt, and pepper; cook until browned.
  4. Remove from heat and mix in the shredded cheeses until melted. Spoon about 2 tablespoons of the mixture onto each tortilla, fold in the sides, and roll tightly.
  5. For frying: Place chimichangas seam-side down in hot oil and fry until golden brown (about four minutes per side). For baking: Arrange seam-side down on a greased baking sheet, brush with oil, and bake for about 25 minutes.
