  • 2 pounds chuck roast, cut into bite-sized pieces
  • 4 cups low-sodium beef broth
  • 2 large carrots, thickly sliced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup whole milk
  • 4 tablespoons unsalted butter, melted

Instructions

  1. In a large pot or Dutch oven over medium-high heat, add oil and brown the chuck roast on all sides (about 5 minutes). Remove beef and set aside.
  2. In the same pot, sauté onions, carrots, and celery until softened (about 5 minutes).
  3. Pour in beef broth and return browned beef to the pot. Bring to a boil, then reduce heat and simmer for about an hour.
  4. While simmering, mix flour, baking powder, milk, melted butter, and salt in a bowl until just combined.
