  • 2 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 1 medium sweet onion, chopped
  • 4 garlic cloves, minced
  • 1 cup fresh cilantro, chopped (for topping)
  • 8 sturdy corn tortillas
  • 2 tbsp lime juice
  • ½ cup salsa verde (for drizzling)

Instructions

  1. Place the beef chuck roast in a slow cooker and cover with water. Add guajillo chiles, onion, and garlic.
  2. Blend half of the cooking liquid with soaked chiles until smooth; return to the slow cooker.
  3. Cook on low for 6-8 hours until beef is fork-tender.
  4. Meanwhile, heat a skillet over medium-high heat and fry tortillas until golden brown and crispy.
  5. Assemble stacks: layer a tortilla with shredded beef, then top with another tortilla, more beef, cilantro, and salsa verde.
  6. Finish with a squeeze of lime juice before serving.
