  • 4 large flour tortillas
  • 6 large eggs
  • 1 cup cooked sausage (pork or turkey)
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers (any color)
  • ½ cup diced onion

Instructions

  1. Chop bell peppers and onions. Sauté them in a skillet over medium heat for about 5 minutes until softened.
  2. Add the cooked sausage and break it apart while cooking until browned (approximately 5 minutes).
  3. In a bowl, whisk together the eggs with a pinch of salt and pepper. Pour into the skillet after removing the sausage mixture. Stir gently until eggs are fluffy (around 3 minutes).
  4. Lay each tortilla flat and fill with the egg mixture, followed by sausage and cheese. Fold in the sides and roll tightly from bottom to top.
  5. Heat an ungreased non-stick skillet over medium-low heat. Place burritos seam-side down for about 2 minutes per side until golden brown.
  6. Serve warm, drizzled with salsa or topped with avocado slices.
