  • 4 large Russet potatoes
  • 2 cups fresh broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream (or Greek yogurt)
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and scrub the Russet potatoes clean.
  2. Bake the potatoes directly on the oven rack for 45-60 minutes until tender.
  3. While the potatoes bake, steam broccoli florets in a microwave-safe bowl for about 3 minutes.
  4. Slice baked potatoes in half lengthwise and scoop out most of the flesh into a mixing bowl.
  5. Mix potato flesh with steamed broccoli, butter, sour cream, salt, pepper, and half of the cheddar cheese until well combined.
  6. Refill potato skins with the mixture, top with remaining cheddar cheese, and bake for another 15-20 minutes until golden and bubbly.
