  • 1 cup crumbled feta cheese
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper.
  2. Finely chop the fresh broccoli into small pieces.
  3. In a mixing bowl, whisk together sugar, cocoa powder, flour, and baking powder until well combined.
  4. In another bowl, beat eggs and vanilla extract until frothy. Combine this mixture with dry ingredients, then gently fold in chopped broccoli and crumbled feta until just mixed.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes or until a toothpick comes out mostly clean but still slightly gooey.
