- 1 lb boneless, skinless chicken breasts
- 2 cloves fresh garlic, minced
- 1 cup panko breadcrumbs
- 1 large egg
- 1/2 cup Buffalo sauce (plus more for coating)
- 2 tbsp butter (for sauce)
- 1/4 cup blue cheese crumbles (optional)
Instructions
- 1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- 2. Shred the chicken using two forks or a food processor until finely shredded.
- 3. In a mixing bowl, combine shredded chicken, garlic, breadcrumbs, egg, and half of the Buffalo sauce. Mix until well combined.
- 4. Form the mixture into one-inch meatballs and place them in the prepared baking dish.
- 5. Bake for 20 minutes until golden brown and cooked through.
- 6. In a saucepan over medium heat, melt butter and mix in remaining Buffalo sauce. Toss baked meatballs in the sauce until coated.
