- 8 oz fusilli or penne pasta
- 4 cups chopped romaine lettuce
- 1 cup freshly grated Parmesan cheese
- ½ cup Caesar dressing (homemade preferred)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 cup panko breadcrumbs
- Juice of 1 lemon
Instructions
- Preheat oven to 400°F (200°C). Coat chicken breasts with olive oil, season with salt, pepper, garlic powder, and coat with panko breadcrumbs.
- Place chicken on a lined baking sheet and bake for 25-30 minutes until golden brown and reaches an internal temperature of 165°F (75°C).
- Boil salted water in a large pot, cook pasta according to package directions until al dente (about 8-10 minutes). Drain and rinse under cold water.
- In a large bowl, mix cooled pasta, chopped romaine, crispy chicken (cut into bite-sized pieces), and Parmesan cheese.
- Drizzle with Caesar dressing and toss gently until well-coated. Add lemon juice before serving.
