  • 4 medium bell peppers (red, yellow, or green)
  • 2 cups cooked shredded chicken breast
  • 1 cup Alfredo sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds. Drizzle with olive oil and season with salt and pepper.
  3. In a bowl, mix together shredded chicken, Alfredo sauce, mozzarella cheese, Parmesan cheese, and Italian seasoning until well combined.
  4. Stuff each pepper generously with the filling mixture.
  5. Place stuffed peppers upright in a baking dish. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until golden and bubbly.
