  • 4 boneless, skinless chicken breasts
  • 2 cups fresh broccoli florets
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1/4 cup low-sodium soy sauce
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups shredded cheese (1 cup cheddar, 1 cup mozzarella)
  • 2 cloves fresh garlic, minced

Instructions

  1. Preheat oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper; cook in a skillet over medium heat for about 5 minutes per side until golden brown but not fully cooked.
