  • 2 cups fresh cherries, pitted (about 300g)
  • 1 cup quinoa, uncooked (about 170g)
  • 4 cups fresh spinach (about 120g)
  • ¼ cup balsamic glaze (60ml)
  • ½ cup crumbled feta cheese (75g)
  • ¼ cup chopped nuts (almonds or walnuts, about 30g)

Instructions

  1. Prep Ingredients: Wash and pit the cherries.
  2. Cook Quinoa: In a medium pot, boil water and add quinoa. Cover and simmer for about 15 minutes until fluffy.
  3. Sauté Chicken: Heat a skillet over medium-high heat. Season chicken with salt and pepper, cooking until golden brown on both sides—6-7 minutes per side.
  4. Combine Spinach and Cherries: In another pan, toss spinach with halved cherries over medium heat until lightly wilted (about 2 minutes).
  5. Assemble Bowl: Layer quinoa in a bowl, top with sautéed spinach and cherries, then slice chicken on top.
  6. Drizzle & Garnish: Finish with balsamic glaze, sprinkle feta cheese, and add chopped nuts before serving.
