  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 9 lasagna noodles
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup fresh spinach (chopped)
  • 2 cups shredded mozzarella cheese
  • 2 tbsp unsalted butter
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Season chicken breasts with salt and pepper; cook in a skillet over medium heat for 6-7 minutes per side until golden brown. Let rest before shredding.
  3. Cook lasagna noodles according to package instructions until al dente; drain and cool on parchment paper.
  4. In a saucepan, melt butter over low heat, add heavy cream and garlic, stirring until warm. Mix in half of the mozzarella cheese until melted.
  5. Spread some Alfredo sauce in the baking dish. Layer each noodle with shredded chicken, spinach, and sauce; roll tightly and place seam-side down in the dish.
  6. Top with remaining Alfredo sauce and mozzarella cheese. Cover with foil and bake for 25 minutes; uncover and bake an additional 10 minutes until golden.
