- 4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 2 ripe avocados
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 2 tbsp low-sodium soy sauce
- 2 tbsp freshly squeezed lime juice
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Chop the chicken into bite-sized pieces and mince the garlic.
- In a skillet over medium heat, add a splash of olive oil. Once hot, sauté the chicken with garlic, seasoning with salt and pepper until golden brown (7-10 minutes).
- Mix soy sauce and lime juice in a small bowl. Pour this over the cooked chicken and stir well.
- Cut avocados in half, remove the pit, scoop out the flesh into a bowl, mash gently with salt.
- Lay out each tortilla flat; add chicken mixture, mashed avocado, and cheese. Roll tightly from one side to the other.
- Grill burritos seam-side down on medium heat until golden brown on both sides (2-3 minutes). Serve warm.
