  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 2 ripe avocados
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Chop the chicken into bite-sized pieces and mince the garlic.
  2. In a skillet over medium heat, add a splash of olive oil. Once hot, sauté the chicken with garlic, seasoning with salt and pepper until golden brown (7-10 minutes).
  3. Mix soy sauce and lime juice in a small bowl. Pour this over the cooked chicken and stir well.
  4. Cut avocados in half, remove the pit, scoop out the flesh into a bowl, mash gently with salt.
  5. Lay out each tortilla flat; add chicken mixture, mashed avocado, and cheese. Roll tightly from one side to the other.
  6. Grill burritos seam-side down on medium heat until golden brown on both sides (2-3 minutes). Serve warm.
