Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 large potatoes (about 2 lbs), peeled and chopped
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray. Season chicken breasts with salt and pepper.
  2. Place chicken in the baking dish and pour chicken broth over them. Bake for 25-30 minutes until cooked through.
  3. Boil potatoes in salted water until fork-tender, about 15-20 minutes.
  4. Drain potatoes, return to pot, add butter, heavy cream, salt, and pepper; mash until smooth.
  5. Mix soy sauce with minced garlic and pour over cooked chicken just before serving.
  6. Serve everything on plates with mashed potatoes as a base topped with chicken.
