- 4 boneless, skinless chicken breasts
- 4 large potatoes (about 2 lbs), peeled and chopped
- 4 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- 1/2 cup heavy cream
- Salt and pepper to taste
- 1 cup chicken broth
- 2 tbsp low-sodium soy sauce
Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray. Season chicken breasts with salt and pepper.
- Place chicken in the baking dish and pour chicken broth over them. Bake for 25-30 minutes until cooked through.
- Boil potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain potatoes, return to pot, add butter, heavy cream, salt, and pepper; mash until smooth.
- Mix soy sauce with minced garlic and pour over cooked chicken just before serving.
- Serve everything on plates with mashed potatoes as a base topped with chicken.
