  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 lb Yukon Gold potatoes, thinly sliced
  • 3 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup low-sodium soy sauce
  • 1 medium onion, finely chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray.
  2. Season chicken with salt and pepper and layer sliced potatoes in the baking dish.
  3. In a bowl, whisk together heavy cream, soy sauce, chicken broth, garlic, and onion until well combined.
  4. Place seasoned chicken on top of the potatoes and pour the sauce evenly over everything.
  5. Cover with aluminum foil and bake for 45 minutes or until chicken is cooked through and potatoes are tender.
  6. Allow to sit for a few minutes before serving.
