  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 4 large flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • Oil for frying

Instructions

  1. In a pan over medium heat, heat oil and sauté chopped onions until translucent. Add minced garlic and cook until fragrant. Stir in chicken breasts, cumin, chili powder, and paprika. Cook until chicken is browned on all sides.
  2. Remove the chicken from the pan and allow it to cool slightly before shredding with two forks. Mix shredded chicken with cheeses and chopped bell peppers.
  3. Lay one tortilla flat; spoon the chicken mixture into the center. Fold in the sides tightly and roll from one end to form a burrito shape.
  4. Heat enough oil in a skillet over medium heat to cover the bottom. Fry each chimichanga seam-side down until golden brown, about three minutes per side.
  5. Drain excess oil on paper towels, then serve hot with sour cream and salsa on top.
