- 12 oz smoked sausage (Andouille), sliced

- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 14.5 oz canned diced tomatoes (with green chilies)
- 3 cups low-sodium chicken broth
- 1 cup long-grain white rice
- 2 tsp paprika
- 1 tsp cayenne pepper (adjust to taste)
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add oil and sauté the chicken until browned (about 5 minutes). Add the sliced sausage until crispy.
- Stir in onions, bell peppers, and garlic; cook until softened (about 3 minutes).
- Add diced tomatoes with juices, chicken broth, rice, paprika, cayenne pepper, thyme, and bay leaves. Stir well.
- Bring to a boil then reduce heat to low. Cover and simmer for about 25 minutes or until rice is tender.
- Remove from heat and let sit for an additional 5 minutes before fluffing with a fork.
