  • 1 lb boneless, skinless chicken breasts, diced
  • 12 oz smoked sausage (Andouille), sliced
  • 1 cup bell peppers (red and green), chopped
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 14.5 oz canned diced tomatoes (with green chilies)
  • 3 cups low-sodium chicken broth
  • 1 cup long-grain white rice
  • 2 tsp paprika
  • 1 tsp cayenne pepper (adjust to taste)
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add oil and sauté the chicken until browned (about 5 minutes). Add the sliced sausage until crispy.
  2. Stir in onions, bell peppers, and garlic; cook until softened (about 3 minutes).
  3. Add diced tomatoes with juices, chicken broth, rice, paprika, cayenne pepper, thyme, and bay leaves. Stir well.
  4. Bring to a boil then reduce heat to low. Cover and simmer for about 25 minutes or until rice is tender.
  5. Remove from heat and let sit for an additional 5 minutes before fluffing with a fork.
