Description

  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 10 small corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp extra virgin olive oil (for brushing)
  • Salsa or guacamole (for serving)

Instructions

  1. Preheat oven to 400°F (200°C). In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant.
  2. Add diced chicken, seasoned with cumin and chili powder, cooking until fully cooked. Remove from heat and let cool slightly.
