  • 2 cups cooked long-grain white rice (preferably day-old)
  • 1 tbsp sesame oil
  • 2 cups mixed vegetables (peas, carrots, bell peppers)
  • 4 cloves fresh garlic, minced
  • ¼ cup low-sodium soy sauce
  • 1 tsp sriracha sauce (optional)

Instructions

  1. Prepare all ingredients by chopping vegetables and mincing garlic.
  2. Heat oil in a skillet over medium-high heat. Season chicken thighs with salt and pepper, then cook for 6-7 minutes per side until golden brown and cooked through (internal temperature of at least 165°F). Remove from skillet and let rest.
  3. In the same skillet, sauté minced garlic and mixed vegetables for about three minutes until tender but crisp.
  4. Add cooked rice to the pan and stir well to combine with veggies.
  5. Drizzle soy sauce over the rice mixture; mix thoroughly and heat for about two minutes.
  6. Chop rested chicken into bite-sized pieces and fold into the fried rice mixture. Heat through for another minute.
