  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 8 strips thick-cut bacon
  • 4 slices pepper jack cheese
  • 2 cups fresh lettuce, shredded
  • 1/2 cup mayonnaise
  • 4 slices hearty bread (sourdough or whole grain)
  • Juice of 1 lime (about 2 tbsp)

Instructions

  1. Preheat grill or stovetop pan over medium heat. Season chicken breasts with salt and pepper; grill for 6–7 minutes per side until cooked through.
  2. In a bowl, mix mayonnaise with chipotle peppers and lime juice for the sauce.
  3. Cook bacon in a separate pan until crispy; reserve some bacon grease if desired.
  4. Assemble sandwiches by spreading chipotle mayo on bread, layering lettuce, grilled chicken, bacon, and cheese.
  5. Toast the assembled sandwich in the skillet using reserved bacon grease or simply toast until golden brown on both sides.
  6. Slice and serve with sweet potato fries or salad.
