  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 tsp salt
  • 1/2 cup heavy cream
  • 6 oz dark chocolate (70% cocoa or higher)
  • 1/2 cup fresh pomegranate seeds

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine flour, cocoa powder, sugar, and salt. Cut in softened butter until crumbly. Press mixture into a tart pan evenly.
  2. Bake crust for about 15 minutes until firm. Allow it to cool completely.
  3. Heat heavy cream in a saucepan until it simmers but does not boil. Remove from heat and stir in dark chocolate until smooth and glossy.
  4. Pour the ganache into the cooled tart crust and let it sit at room temperature while preparing the topping.
  5. Once set (approximately one hour), sprinkle fresh pomegranate seeds on top.
  6. Chill in the refrigerator for at least two hours before slicing and serving.
