  • 4 medium Yukon gold potatoes (about 2 lbs), diced
  • 6 large eggs

  • 1 cup bell peppers, diced
  • 1/2 cup sweet onion, diced
  • Salt and pepper to taste
  • 1 tsp paprika

Instructions
