  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 slices bacon, chopped
  • 1 cup cremini or button mushrooms, sliced
  • 2 cups carrots, sliced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups red wine (Cabernet Sauvignon)
  • 2 cups low-sodium beef broth
  • 2 tsp fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your Dutch oven over medium-high heat. Cook bacon until crispy; remove and set aside.
  2. In the same pot, sear beef cubes in the bacon drippings until browned on all sides. Remove and set aside.
  3. Sauté onions, carrots, and mushrooms in the pot until soft, about 5 minutes. Add garlic and stir for an additional minute.
  4. Deglaze with red wine, scraping brown bits from the bottom of the pot; simmer for about 10 minutes.
  5. Return beef to the pot along with any juices. Add broth, thyme, bay leaves, salt, and pepper. Bring to a gentle boil.
  6. Cover and simmer on low heat for about 2 hours or transfer to a preheated oven at 350°F (175°C) for hands-off cooking.
