  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar (for crust)
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/3 cup freshly squeezed lemon juice
  • 1 tsp baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, combine flour and ½ cup sugar. Stir in melted butter until crumbly; press into the bottom of the dish.
  3. Bake the crust for about 15 minutes until golden.
  4. In another bowl, whisk together eggs, 1 cup sugar, lemon juice, and baking powder until smooth.
  5. Pour this mixture over the baked crust and return to the oven for an additional 20-25 minutes until set but slightly wobbly in the center.
  6. Allow to cool completely before slicing into squares. Dust with powdered sugar if desired.
