  • 4 large egg yolks
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract

  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, whisk together heavy cream, egg yolks, granulated sugar, vanilla extract, nutmeg, and cinnamon until smooth.
  3. Strain the mixture through a fine-mesh sieve.
  4. Pour evenly into four ramekins and place them in a baking dish filled with hot water halfway up their sides.
  5. Bake for 30-35 minutes until edges are set but centers jiggle slightly.
  6. Cool at room temperature, then refrigerate for at least two hours.
  7. Before serving, sprinkle brown sugar over each crème brûlée and caramelize using a kitchen torch or broiler.
