  • 3 cups ground boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 medium fresh jalapeños, finely chopped (deseeded for less heat)
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Prepare a baking dish with nonstick spray.
  2. In a bowl, mix ground chicken, minced garlic, chopped jalapeños, salt, pepper, and herbs. Shape into golf-sized meatballs.
  3. Bake meatballs for 20-25 minutes until golden brown.
  4. In a pot over medium heat, combine coconut milk, curry powder, soy sauce, and lime juice until bubbling.
  5. Add baked meatballs to the sauce and simmer for 5 minutes.
  6. Serve in bowls topped with chopped cilantro and extra sauce.
