- 2 ripe mangoes, peeled and diced
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1/4 cup freshly squeezed lime juice
- 1 cup powdered sugar (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and lightly grease it.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Gradually mix in the flour until combined, then press this mixture evenly into the bottom of the prepared pan.
- In another bowl, mash the diced mangoes gently and mix in lime juice. Pour this mixture over the crust.
- Bake for 25-30 minutes until set but not browned. Cool completely.
- Whisk together powdered sugar and additional lime juice until smooth and drizzle over cooled bars.
- Slice into squares and serve.
