Instructions
- Preheat oven to 325°F (160°C). Crush the digestive biscuits into fine crumbs in a mixing bowl.
- Combine biscuit crumbs with melted butter until it resembles wet sand.
- Line a muffin tin with paper liners. Press about one tablespoon of the mixture into each liner.
- In another bowl, beat cream cheese until smooth, then gradually add icing sugar. Stir in sour cream and vanilla extract until mixed.
- Spoon cheesecake filling over each base, filling them about three-quarters full.
- Bake for 15–20 minutes or until set but slightly jiggly in the center. Cool at room temperature, then chill in the refrigerator for at least two hours.
- Top each cheesecake with raspberry jam before serving.
