  • 1 cup digestive biscuits (crushed)
  • 4 tbsp unsalted butter (melted)
  • 8 oz cream cheese (softened)
  • 1/2 cup icing sugar
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/3 cup raspberry jam (or jam of choice)

Instructions

  1. Preheat oven to 325°F (160°C). Crush the digestive biscuits into fine crumbs in a mixing bowl.
  2. Combine biscuit crumbs with melted butter until it resembles wet sand.
  3. Line a muffin tin with paper liners. Press about one tablespoon of the mixture into each liner.
  4. In another bowl, beat cream cheese until smooth, then gradually add icing sugar. Stir in sour cream and vanilla extract until mixed.
  5. Spoon cheesecake filling over each base, filling them about three-quarters full.
  6. Bake for 15–20 minutes or until set but slightly jiggly in the center. Cool at room temperature, then chill in the refrigerator for at least two hours.
  7. Top each cheesecake with raspberry jam before serving.
