  • 4 large egg whites (room temperature)
  • 1 cup granulated sugar
  • 1 tsp white vinegar
  • 1 tsp cornstarch
  • 1 cup heavy whipping cream
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup chopped pistachios (for garnish)

Instructions

  1. Preheat oven to 250°F (120°C) and line two baking sheets with parchment paper.
  2. In a clean bowl, whip egg whites until soft peaks form. Gradually add sugar while continuing to beat until stiff peaks develop.
  3. Gently fold in vinegar and cornstarch into the meringue mixture.
  4. Spoon meringue onto prepared baking sheets, forming rounds about six inches wide.
  5. Bake for about 1 hour until the outside is dry but slightly soft inside. Turn off the oven and let cool inside.
  6. Once cooled, fill each shell with whipped cream and top generously with mixed berries and chopped pistachios.
