Ingredients

  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup almonds or walnuts, toasted
  • 1/2 cup dried cranberries
  • 1/4 cup honey mustard dressing (made with 2 tbsp honey, 2 tbsp mustard, 2 tbsp olive oil, juice of 1 lemon, salt and pepper to taste)

Instructions

  1. Wash mixed greens thoroughly and spin dry.
  2. Chop cucumbers and halve cherry tomatoes; slice red onion.
  3. Toast nuts in a dry skillet over medium heat for about 5 minutes until golden brown.
  4. In a large bowl, combine mixed greens, vegetables, cranberries, and nuts; toss gently.
  5. Whisk together dressing ingredients until smooth and drizzle over the salad just before serving.
