  • 3 lbs short ribs
  • 1 cup apple cider
  • 2 medium yellow onions, chopped
  • 3 large carrots, cut into chunks
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 cups low-sodium beef stock
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 bay leaves

Instructions

  1. Prep your ingredients by chopping onions and carrots, and mincing garlic.
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season short ribs with salt and pepper, then sear until golden brown, about 3-4 minutes per side. Remove from pot.
  3. In the same pot, add onions, carrots, and garlic; sauté for 2 minutes. Deglaze with apple cider, scraping any browned bits.
  4. Return short ribs to the pot along with beef stock and bay leaves. Bring to a gentle boil then reduce heat to low.
  5. Cover tightly and braise for 2-3 hours until tender. Let rest for 10 minutes before serving over mashed potatoes or polenta.
