- 1 cup apple cider
- 2 medium yellow onions, chopped
- 3 large carrots, cut into chunks
- 4 cloves garlic, minced

- 2 cups low-sodium beef stock
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 bay leaves
Instructions
- Prep your ingredients by chopping onions and carrots, and mincing garlic.
- In a large Dutch oven, heat olive oil over medium-high heat. Season short ribs with salt and pepper, then sear until golden brown, about 3-4 minutes per side. Remove from pot.
- In the same pot, add onions, carrots, and garlic; sauté for 2 minutes. Deglaze with apple cider, scraping any browned bits.
- Return short ribs to the pot along with beef stock and bay leaves. Bring to a gentle boil then reduce heat to low.
- Cover tightly and braise for 2-3 hours until tender. Let rest for 10 minutes before serving over mashed potatoes or polenta.
