- 1 cup fresh cilantro leaves, chopped
- 1/4 cup freshly squeezed lime juice (about 2 limes)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
- 1 avocado (optional), diced
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente; drain and rinse with cold water.
- In a bowl, whisk together lime juice, olive oil, salt, and pepper to make the dressing.
- Chop cherry tomatoes, cucumber, red onion, and cilantro into bite-sized pieces.
- In a large bowl, combine cooled pasta with veggies; drizzle dressing over and toss gently.
