Ingredients

  • 8 oz rotini or penne pasta
  • 1 cup fresh cilantro leaves, chopped
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 avocado (optional), diced

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente; drain and rinse with cold water.
  2. In a bowl, whisk together lime juice, olive oil, salt, and pepper to make the dressing.
  3. Chop cherry tomatoes, cucumber, red onion, and cilantro into bite-sized pieces.
  4. In a large bowl, combine cooled pasta with veggies; drizzle dressing over and toss gently.
  5. If using avocado, add just before serving to maintain freshness.
  6. Taste and adjust seasoning as needed.
