Description

Ingredients

  • 2 lbs Yukon Gold or russet potatoes
  • 1 small head green cabbage (or kale)
  • ½ cup finely chopped green onions
  • ½ cup (1 stick) butter
  • 2 sheets puff pastry (thawed)
  • 1 egg (for egg wash)

Instructions

  1. Boil potatoes in salted water until fork-tender (15-20 minutes). Drain and mash until smooth.
  2. In a skillet, melt half the butter over medium heat. Sauté chopped cabbage until soft and slightly caramelized (5-7 minutes).
  3. Combine the mashed potatoes, sautéed cabbage, green onions, and remaining butter in a bowl. Season with salt and pepper.
  4. Roll out puff pastry on a floured surface to about 1/8 inch thick; cut into squares.
  5. Spoon filling onto each square, fold over and seal edges securely.
  6. Preheat oven to 400°F (200°C). Place puffs on a parchment-lined baking sheet, brush with beaten egg, and bake for 20-25 minutes until golden brown.
