Ingredients

  • 1 large head cauliflower (about 600g)
  • 1 cup green onions, chopped (about 150g)
  • 4 tbsp unsalted butter
  • 2 cups green cabbage, shredded (about 150g)
  • ½ cup heavy cream (or coconut milk for dairy-free)

Instructions

  1. Chop cauliflower into florets and boil in salted water until tender, about 10-12 minutes. Drain and set aside.
  2. In a large skillet over medium heat, melt butter. Add shredded cabbage and sauté until wilted and slightly caramelized, about 6-8 minutes.
  3. Mash the drained cauliflower until smooth using a potato masher or immersion blender. Mix in heavy cream and more butter for added richness.
  4. Fold in sautéed cabbage and chopped green onions. Season with salt and pepper to taste.
  5. Transfer to a serving dish, create peaks on top for presentation, and sprinkle with extra green onions before serving warm.
