  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. 1. Wash and chop the onion, carrots, and celery into small pieces for even cooking.
  2. 2. In a large pot over medium heat, add oil and sauté the chopped onions until translucent. Add minced garlic and sauté until fragrant.
  3. 3. Add the boneless chicken breasts to the pot and cook until browned on all sides (about 5 minutes).
