  • Salt & pepper, to taste

Instructions

  2. Season the beef roast generously with salt and pepper on all sides.
  3. In a skillet over medium-high heat, sear the roast for about 3-4 minutes per side until golden brown.
  4. In a bowl, whisk together cranberry sauce and balsamic vinegar; mix in garlic and herbs.
  5. Place the seared roast in a baking dish, pour the sauce over it, and cover tightly with foil.
  6. Bake for approximately 2 hours or until tender (internal temperature should reach 145°F/63°C). Let rest before slicing.
