  • 2 medium beets (about 8 oz), roasted
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 8 oz fettuccine pasta
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap beets in foil and roast for 45-60 minutes until fork-tender. Cool and peel.
  2. In a pan, heat olive oil over medium heat and sauté minced garlic until fragrant, about 2 minutes.
  3. Blend the roasted beets with heavy cream and sautéed garlic until smooth.
  4. Pour the beet mixture back into the skillet over low heat, stir in Parmesan (if using), and season with salt and pepper.
  5. Cook fettuccine according to package instructions; drain while reserving some pasta water.
