  • 3 cups vegetable broth
  • 2 cups fresh spinach
  • 1 cup sliced mushrooms (cremini or button)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Add chopped onion and sauté until translucent (about 3-4 minutes).
  2. Add minced garlic and sliced mushrooms; cook until mushrooms are golden brown (5-7 minutes).
  3. Stir in Arborio rice and toast for about 2 minutes.
  4. Gradually add warm vegetable broth, one ladle at a time, stirring frequently until absorbed (15-20 minutes).
  5. Mix in fresh spinach until wilted and then stir in Parmesan cheese. Remove from heat and add butter for creaminess. Season with salt and pepper before serving.
