Description

Creamy shrimp enchiladas are a comforting Mexican dish that brings together tender shrimp, creamy sauce, and gooey cheese all wrapped in soft tortillas. Ingredients

  • 1 lb medium shrimp (peeled and deveined)
  • 8 corn or flour tortillas
  • 8 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 green onions (chopped)
  • 10.5 oz cream of mushroom soup
  • 1 cup low-sodium chicken broth
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an oven-safe baking dish with nonstick cooking spray.
  2. In a skillet, heat olive oil over medium heat. Sauté the shrimp with salt and pepper until pink and opaque, about 3-4 minutes. Remove from skillet and set aside.
  3. In the same skillet, combine cream cheese, cream of mushroom soup, chicken broth, and half of the shredded cheeses over low heat. Stir until smooth.
  4. Spoon some sauce onto each tortilla, add shrimp and green onions, roll tightly, and place seam-side down in the baking dish.
  5. Pour remaining sauce over the enchiladas and sprinkle with the rest of the cheese.
  6. Bake for 25-30 minutes until bubbly and golden brown.
