  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • ½ cup sun-dried tomatoes, chopped
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat. Cook chicken for about 6-7 minutes per side until golden brown and fully cooked. Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for one minute until fragrant. Stir in sun-dried tomatoes.
  3. Pour in heavy cream while scraping the bottom of the pan to incorporate flavor bits. Add grated Parmesan cheese until melted and creamy.
  4. Add fresh spinach to the sauce and let it wilt.
  5. Chop the cooked chicken into bite-sized pieces and return it to the skillet. If you’ve cooked pasta separately, add drained pasta to the skillet and toss everything together until evenly coated.
  6. Serve hot, garnishing with additional Parmesan if desired.
