- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- ½ cup sun-dried tomatoes, chopped
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat. Cook chicken for about 6-7 minutes per side until golden brown and fully cooked. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for one minute until fragrant. Stir in sun-dried tomatoes.
- Pour in heavy cream while scraping the bottom of the pan to incorporate flavor bits. Add grated Parmesan cheese until melted and creamy.
- Add fresh spinach to the sauce and let it wilt.
- Chop the cooked chicken into bite-sized pieces and return it to the skillet. If you’ve cooked pasta separately, add drained pasta to the skillet and toss everything together until evenly coated.
