  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 cups cooked white rice
  • 1 can (15 oz) black beans, rinsed
  • 4 large flour tortillas
  • 2 tbsp low-sodium soy sauce
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Nonstick cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. Roast in the oven for about 25 minutes or until they reach an internal temperature of 165°F (74°C). Let cool and shred.
  3. In a skillet over medium heat, sauté minced garlic in oil until fragrant (approximately 1 minute).
  4. In a large bowl, combine shredded chicken, cooked rice, black beans, sautéed garlic, soy sauce, and chili powder. Mix well.
