  • 1 cup unsweetened coconut flakes
  • 1/2 cup all-purpose flour
  • 2 large eggs (or 2 flax eggs for vegan)
  • 1 cup fresh pineapple chunks
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or agave syrup
  • 2 tbsp lime juice
  • Salt and pepper to taste
  • 2 tbsp vegetable oil for frying

Instructions

  1. Press and drain the tofu to remove excess moisture; slice into bite-sized cubes.
  2. Set up a breading station with three bowls: one with flour seasoned with salt and pepper, another with beaten eggs (or flax eggs), and a third filled with coconut flakes.
  3. Dip each tofu cube in flour, then egg, followed by coating generously with coconut flakes.
  4. Heat vegetable oil in a skillet over medium heat; pan-fry tofu cubes until golden brown on all sides (about 3-4 minutes per side).
  5. In a small saucepan, combine pineapple chunks, soy sauce, honey/agave syrup, and lime juice; simmer until thickened slightly (about 5 minutes).
