Ingredients

  • 4 medium Russet potatoes (about 800g)
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 2 cups vegetable oil (for frying)
  • 1 tsp sea salt (for seasoning)
  • Optional: Ketchup and mayonnaise for dipping

Instructions

  1. Wash and peel the Russet potatoes, then cut them into long strips about 1/2 inch thick.
  2. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
  3. Mix together the all-purpose flour and cornstarch in a bowl. Toss the soaked potatoes until evenly coated.
  4. Heat vegetable oil in a deep pot to about 350°F (175°C).
  5. Fry the coated potato strips in batches for about 5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  6. While hot, sprinkle with sea salt and serve with ketchup or mayonnaise.
