  • 1 cup ice-cold water
  • 1 tsp salt
  • 2 cups vegetable oil (for frying)

  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp sesame oil
  • ½ tsp chili flakes (optional)

Instructions

  1. Rinse and pat dry the shrimp thoroughly.
  2. In a bowl, mix tempura flour and ice-cold water until just combined; lumps are okay.
  3. Heat vegetable oil in a deep pan to 350°F (175°C).
  4. Dip each shrimp in the batter and fry in batches until golden brown (2-3 minutes).
  5. For the dipping sauce, whisk together soy sauce, lemon juice, sesame oil, and chili flakes.
  6. Drain fried shrimp on paper towels and serve hot with dipping sauce.
