  • 1 cup green or brown lentils
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 medium zucchini, sliced into half-moons
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • Juice of 1 lime (optional)

Instructions

  1. Prepare base ingredients: Chop onion, bell peppers, zucchini, and mince garlic.
  2. Sauté vegetables: Heat olive oil in a skillet over medium heat. Add onion and bell peppers; cook until softened (about 5 minutes).
  3. Add garlic & spices: Stir in minced garlic, cumin, and chili powder; cook for an additional minute until fragrant.
  4. Combine in crock pot: Transfer sautéed vegetables to the crock pot. Add lentils, diced tomatoes, zucchini, vegetable broth, salt, and pepper; mix well.
  5. Cook low & slow: Cover and set the crock pot on low for 6-8 hours or high for 3-4 hours until lentils are tender.
  6. Taste & adjust seasoning: About 30 minutes before serving, stir in lime juice and adjust seasonings if needed.
