  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 medium carrots, sliced
  • 4 green onions, chopped (for garnish)
  • 1/4 cup low-sodium soy sauce
  • 2 tsp sesame oil
  • 2 tbsp cornstarch
  • 8 oz lo mein noodles

Instructions

  1. Chop the chicken into bite-sized pieces. Mince the garlic and slice the bell peppers and carrots.
  2. In the crockpot, combine chicken, garlic, bell peppers, carrots, soy sauce, sesame oil, and cornstarch; mix well.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. About 30 minutes before serving, cook lo mein noodles according to package instructions until al dente.
  5. Stir cooked noodles into the crockpot right before serving. Garnish with green onions.
