  • 1 lb beef sirloin or flank steak, sliced
  • 2 cups bell peppers (1 red, 1 green), sliced
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 3 tbsp soy sauce (low-sodium)
  • 1 tbsp cornstarch
  • 2 tbsp brown sugar
  • Salt and pepper to taste
  • Optional: crushed red pepper flakes for heat

Instructions

  1. Slice the beef against the grain into thin strips.
  2. In a skillet over medium-high heat, sear half of the beef strips until browned (about 2-3 minutes). Transfer to the Crockpot and repeat with remaining beef.
  3. Add bell peppers, onion, and garlic to the Crockpot with the seared beef.
  4. In a bowl, mix beef broth, soy sauce, brown sugar, salt, pepper, and optional crushed red pepper flakes; pour over the meat and veggies.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, combine cornstarch with water until smooth and stir into the mixture to thicken.
