- 8 slices thick-cut bacon
- 1/2 cup mayonnaise
- 4 leaves romaine lettuce
- 4 slices sourdough bread
- 1 cup all-purpose flour
- 1 cup cornmeal
- 2 large eggs
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Slice green tomatoes into thick rounds (about 1/2 inch). Set up three shallow bowls: one with seasoned flour, one with beaten eggs, and one with cornmeal mixed with salt and pepper.
- Dredge each tomato slice in flour, dip in egg, then coat in cornmeal. Lay them out on a plate.
- Heat vegetable oil in a skillet over medium-high heat. Fry the coated tomato slices until golden brown on both sides (about 3 minutes each). Drain on paper towels.
- In another pan, cook bacon until crispy.
- Toast sourdough bread until golden brown. Spread mayonnaise on one slice, layer with lettuce, fried green tomatoes, and bacon. Top with another slice of bread.
