  • 2 firm green tomatoes (about 1 pound)
  • 8 slices thick-cut bacon
  • 1/2 cup mayonnaise
  • 4 leaves romaine lettuce
  • 4 slices sourdough bread
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 2 large eggs
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Slice green tomatoes into thick rounds (about 1/2 inch). Set up three shallow bowls: one with seasoned flour, one with beaten eggs, and one with cornmeal mixed with salt and pepper.
  2. Dredge each tomato slice in flour, dip in egg, then coat in cornmeal. Lay them out on a plate.
  3. Heat vegetable oil in a skillet over medium-high heat. Fry the coated tomato slices until golden brown on both sides (about 3 minutes each). Drain on paper towels.
  4. In another pan, cook bacon until crispy.
  5. Toast sourdough bread until golden brown. Spread mayonnaise on one slice, layer with lettuce, fried green tomatoes, and bacon. Top with another slice of bread.
  6. Cut the sandwich in half and serve immediately.
