  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 soft pretzels (about 8 oz), finely crushed
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 cup sharp cheddar cheese, freshly grated
  • 2 tbsp Dijon mustard
  • 1/2 cup whole milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray and season chicken with salt and pepper.
  2. In a food processor, crush soft pretzels until fine. In one bowl, beat eggs; in another bowl, mix panko breadcrumbs with half of the crushed pretzels.
  3. Dredge each chicken breast in the egg mixture, then coat thoroughly in the panko-pretzel mixture.
  4. Place coated chicken in the prepared baking dish and bake for 25-30 minutes until internal temperature reaches 165°F (74°C).
  5. Meanwhile, melt cheddar cheese with Dijon mustard and milk in a saucepan over low heat until smooth.
  6. Serve the crispy chicken drizzled with the mustard-cheddar sauce.
